We hire for kitchen and floor in all four rooms, and we hire year round rather than in bursts, because the alternative is hiring in a hurry.
Everything is paid at or above the going rate for the role in Lagos, service is pooled and split by hours worked rather than by section, and the split is written down where anyone can read it.
